On April 5, 6 and 7 chefs Bijdendijk and Vallejo will cook together during a three-day guest chef event in RIJKS®, the restaurant of the Rijksmuseum.
Chef Vallejo has had an impressive career at restaurants such as Pujol in Mexico and Nomain Copenhagen. Together with his wife Alejandra he opened restaurant Quintonil in 2012 located in Mexico City.
With the kitchen led by Vallejo and Alejandra in front, Quintonil offers a contemporary Mexican cuisine where gastronomic traditions have a modern twist. The emphasis is on sustainability.
In 2014 Vallejo launched Orígenes, together with chefs Mauro Colagreco (restaurant Mirazur, Menton, France) and Virgilio Martínez (Restaurant Central, Lima, Peru). An initiative to rediscover and preserve Latin American products, techniques and habits in the kitchen.
Quintonil debuted in 2015 in the World’s 50 Best Restaurants list at number 35 and climbed to the 11th place in the last three years, making the restaurant the highest rated Mexican restaurant on the list.
In the first weekend of April, chefs Bijdendijk and Vallejo join forces and create a special menu for lunch and dinner.

Together Bijdendijk and Vallejo prepare a special menu during the weekend. The menu consists of 6 courses during lunch and dinner at € 110 p.p.

During this event we ask all guests for a deposit of € 50 p.p. The payment can be done directly online while finishing the booking via IDeal or Creditcard.
